Am considering using SS for my websites. Am currently using a program that makes me rebuild and re=upload the entire site everytime I need to make a change or delete a product (unless I want to try to edit the HTML - not a great choice for illiterate HTML me!) Am wondering if this would be the same with SS.

No, you don't have to publish entire site. If using the built-in SS Publisher you just need to upload the page with the changes.
