Has anyone tried SS on Win7 beta? If not does anyone know whether SS will work on Windows 7?

Yes, it will work. I'm using Win 7 RC. The only problem I'm having is publishing via the FTP tab - but only to my local server. (WS FTP Pro is also having a problem connecting to my local server.) But remote publishing works OK with the SS publisher.

I too am using Win7 RC (64 bit). Just about everything I've installed seems to work fine, including SSPro.
