If I purchase a new PC, I'll probably have to spend three months re-organizing my files for SiteSpinner: my image files are in about 35 different directories in drive F:\photos, my mp3 files are in several directories in C:\mymusic and my video clips are in multiple directories in H:\video.
It would be wonderful if I could tell SS to copy all my current files into a single "Catchall" directory and place all newly created ones in that directory.
Possible???????

Yes, and you can do it now, but not as easily as you envisage. These are the steps involved:

Publish your project to local disk using the gather option. This will gather your image and other files to designated folders in your publish folder. It won't catch original source images that you haven't used for direct display in your project, but will catch the scaled down versions.

Copy the designated folders to make the source folders for your new project. Then tell SiteSpinner via the 'New Dir' command in the Geometry Editor about the new directory for your image files.

For your Video and Audio files, you will have to tell your project about each new location individually (file-by-file basis), but hopefully you won't have too many of those.
